Stuffed Poblanos : For all those that are or are not vegetarian:)

Potato Stuffed Poblanos!


Yummy! That is all I can say about this recipe. I found it in one of my cuisine at home magazines about a year ago , around the same time I found out Spencer needed a gluten-free diet:)

These are easy to make and one of the tastiest dishes I have had in a while. While they are baked instead of fried , it makes these peppers one of the healthier Mexican dishes out there.

Ok so here is the recipe:


Potato Stuffed Poblanos with Monterey Jack Cheese

2 large poblano peppers
12 ounces potatoes -- cubed
1/2 cup sliced yellow onion
1 cup shredded Monterey jack cheese -- divided
1/4 cup sliced green onions
3 tablespoons cream cheese
3 tablespoons diced green chilies -- (canned)
1 tablespoon minced jalapeno -- (remove seeds for less heat)
1 tablespoon sour cream
1 teaspoon garlic powder
1/4 teaspoon ground cumin
2 teaspoons fresh lime juice
salt and black pepper to taste

Preheat oven to 425F. Coat a baking sheet with nonstick cooking spray.

Roast poblanos over a gas burner until skins blacken. Transfer to a bowl, cover with plastic wrap, and allow to steam for 10 minutes. Peel the blackened skin off of the peppers, make a slit down one side of each pepper, remove the core and seeds, and set aside.

For the filling, boil the potatoes and the onion in a pot of boiling water until tender; drain and return to pot. Stir the potatoes and onion mixture over high heat for about 30 seconds, or until the excess moisture has evaporated.

Mash the potatoes and onion along with 3/4 cup of the Monterey jack chjeese and remainin ingredients through cumin. Stir in the lime juice and season with salt and pepper.

Divide potato filling between the poblanos and sprinkle the cheese over the peppers.

Place peppers on baking sheet and bake until cheese is golden brown, about 20 minutes.

On the Road Again....

So I am sitting in the airport listening to several older people talking about politics and figured I would take a moment to blog. This past week has been full of drama , but if you know me you know this is not uncommon unfortunately. I took the position as varsity cheer coach and also junior high cheer coach. I am really enjoying the position except for one thing...... a certain parent. Needing to pray more than ever right now for guidance, I have suddenly understood why no one else wanted this position. Teaching at a private school has its ups and downs. I love that I can pray for my students and encourage them daily in the word, but on the flip side I really dislike how involved some parents can be. This is not me saying anything bad about these parents, because I know they pay very good money to have a say in their child's activities and learning experience. I just want to have some sort of a say also.

Other than that, my week was great! I had so much fun yesterday going shopping with the hubs. We both got new shoes, and I know that doesn't seem like a huge deal but if you knew how tight things have been lately you would understand. We are on a Dave Ramsey kick, and so every penny has its place. We are so thankful nonetheless that we have been able to save so much money.

Well I will probably have much more to talk about after my trip to Hume:)
